Here’s how to make this Arroz con Gandules Instant Pot. Now that you have the ingredients let’s make it!
Hit the Sauté button and add olive oil, sofrito, olives, tomato sauce, Sazon and cook for about 3 minutes until everything is blended well.
Add the gandules and saute for another minute or two.
Add the chicken broth, salt, and pepper (to taste), and rice and stir. There’s nothing wrong with tasting your rice right now before you seal it and cook it. That way you will know if you want to add more salt and pepper.
Hit rice 12 minutes. Now, know that the Instant Pot Duo we used you can press rice and 12 minutes is the auto time. The IP will stop cooking once the rice is done cooking.
Let it rest for a few minutes before releasing pressure.

Arroz con Gandules Instant Pot Recipe
Authentic Puerto Rican Arroz con Gandules (Rice with pigeon peas) made using an Instant Pot.
- 2 cups of white rice
- 2 Tablespoons of Sofrito
- 1 (15 oz) can of gandules (pigeon peas)
- 1 Packet of sazon
- 4 ounces of tomato sauce
- 2 cups of chicken broth
- 2 Tablespoons of olive oil
- 2 Tablespoons of olives
- Salt and pepper to taste
- Hit Sauté button and add olive oil, sofrito, olives, tomato sauce, sazon and cook for about 3 minutes until everything is blended well.
- Add the gandules and sauté for another minute or two.
- Add the chicken broth and rice and stir
- Cancel Sauté
- Hit rice 12 minutes or Rice button and it will auto cook.
You can use water instead of chicken broth.
You can use chicken bourbon.
You can skip the olives if you don't like them.

Is it possible to cut the recipe in half and would that mess up the cooking time in the ip? This will be my first time making rice in it.
Do I add more water is I add some ham?
Have you tried doubling the recipe and it still came out good? If so, did you double the cook time exactly?
You may have tried. I find there is never a need to increase the cook time. The more full the pot the longer it takes to get to pressure. I’m waiting on my doubles recipe right now.
Ok I’ve made this recipe so many times and LOVE IT!!! I triple the recipe so I can have leftovers (family of 6 here) my one issue is the cooking time in the pressure cooker. I hit rice, it goes to 12 minutes and it’s on normal low pressure. Is this right? The first time it took forever to cook. Is that right? Or am I doing something wrong?
Hi Tina!! I am glad you love this recipe!!! When it comes to an Instant Pot, from experience the more you add the longer it takes to come to pressure. So, no you are not doing anything wrong. Also, after many use and depending how old your IP (Instant Pot) it might need a new list ring. But no you are not doing anything wrong. The more you have in the liner the longer it takes to come to pressure. – Joyce

If the little knob is down then it should be ready
I’ve made this multiple times. It’s delicious, but for some reason it burns everytime I pressure cook on high for 12 mins. I follow the recipe the same way, except I just use one whole can of tomato sauce (6oz) and instead of chicken stock, to reduce sodium, I replace it with 2 cups of water. Am I doing something wrong? How can I prevent it from burning?
Hi, Sue! I am so sorry that you are getting burned. If you are using a new version of an Instant Pot, use the rice button instead. I don’t think you are doing anything wrong. These machines work differently. Make sure you add the rice last and stir it. Let me know if you have any other question.
