Pan de coco or coconut bread is a popular bread found in Latin America but originated from the Philippines.

To make Pan de Coco you are going to need the following ingredients:

  • flour
  • sugar
  • yeast
  • milk
  • oil
  • salt
  • dried coconut
  • brown sugar
  • coconut milk
  • water
  • vanilla extract
  • Egg yolk

How to make Pan de Coco

Now that you have gathered your ingredients, it is time to make this coconut-filled bread recipe. Follow the steps below and you will be enjoying this recipe in no time.

Using a large bowl, combine the flour, sugar, yeast, and salt. Once you have combined these ingredients, add the oil and warm milk, and knead the dough until you have an elastic texture.

Cover the dough and find a warm area to help the dough rise. Once you find the warm area for your dough, allow it to rise for forty minutes.

While the dough is rising, grab a pot and place it on the stove. Heat the stove to medium heat and add the coconut, brown sugar, flour, coconut milk, water, vanilla, and mix.

Heat these ingredients until it starts to thicken. Once your mixture is thickened, remove from heat and place aside.

Once your dough has risen, uncover it and create twelve dough balls.

Grab each dough ball and flatten them.

Next, use a tablespoon if you have one, and scoop the coconut filling and place it on the flattened dough.

Uncover the dough and shape 12 balls. Flatten each ball and fill with around 1 tbsp coconut filling.

After you have filled the dough with coconut filling, pinch the corners together and roll the dough between your hands to close and shape back into a ball.

Place each roll into a baking sheet and cover and allow it to rise for thirty minutes.

Preheat the oven to 350 degrees.

Uncover the coconut rolls and before you place them in the oven, brush egg yolk over them.

Place inside the oven and heat for about thirty-five to forty minutes.

Ingredients

  • 2 Cups flour
  • 1/4 Cup sugar
  • 1 Tsp yeast
  • 1/2 Cup milk, warm
  • 1/4 Cup oil
  • Pinch of salt
  • 1 Cup dried coconut
  • 1/2 Cup brown sugar
  • 1/2 Cup coconut milk
  • 1/3 Cup water
  • 2 Tbsp flour
  • 1 Tsp vanilla extract
  • 1 Egg yolk

Instructions

  1. In a bowl, combine the flour, sugar, yeast, and a pinch of salt. Add the oil and warm milk and knead until you have a soft, elastic dough. Cover with a cloth and set on a warm spot to rise for 40 minutes.
  2. In a pot over medium heat, combine the coconut, brown sugar, flour, coconut milk water, and vanilla extract. Bring to a simmer and cook until thickened, around 5 minutes. Remove from heat.
  3. Uncover the dough and shape 12 balls. Flatten each ball and fill with around 1 tbsp coconut filling.
  4. Pinch the corners together and roll between your hands to close.
  5. Cover and let it rise for 30 more minutes—Preheat the oven to 350 degrees. Brush with the egg yolk and take to the oven for 35 to 40 minutes.
