This Cuban Mojo Chicken recipe is made with orange and cilantro and baked to perfection!

It's a bit crispy on the outside and totally juicy on the inside. It's so flavorful even the ones that consider chicken “boring” will go for seconds. 

You don't even need to be a huge fan of Latin food or Cuban food, in general, to love it either; this is one of those recipes that pack a punch without it being overpowering.

I like it with only orange zest and orange juice, but it's also delicious with a combination of limen and orange. 

You can also use whatever chicken cuts you have on hand. However, it's more delicious when using pieces that have skin.

The skin broils and gets caramelized, and that's what adds extra crispiness and browned bits that make this recipe taste and look so beautiful. 

Serve it with rice and beans or with some tostones.

What are the ingredients to make Mojo Chicken?

To prepare this Mojo Chicken recipe, you are going to need the following ingredients:

  • olive oil
  • cilantro
  • orange zest
  • orange juice
  • cumin
  • oregano
  • Garlic cloves
  • salt
  • Pepper
  • Orange wedges
  • chicken thighs or legs

Follow the step below to make this mojo recipe:

Using a large bowl combine all the ingredients except for the chicken and orange wedges.

Next, mix the ingredients well to create the mojo marinade.

Add the chicken to the marinade, cover and refrigerate for up 4 to 12 hours.

Once you are ready to prepare the chicken, preheat the oven to 350 degrees.

Use a baking pan and place the chicken with the skin side down.

Next, add the marinade and orange wedges to the chicken.

Bake the chicken for 30 minutes.

Once 30 minutes pass, flip the chicken and spoon some marinade on top.

Bake the chicken for an additional 20 to 25 minutes.

Remember, the internal temperature safe to eat chicken is 165F.

Ingredients

  • ½ Cup olive oil
  • ½ Cup cilantro, chopped
  • 1 Tsp orange zest
  • ½ Cup orange juice
  • 1 Tsp cumin
  • 1 Tsp oregano
  • 3 Garlic cloves, minced
  • 1 Tsp salt
  • Pepper
  • Orange wedges
  • 2 Pounds chicken thighs or legs

Instructions

  1. In a big bowl combine all the ingredients except the chicken and orange wedges. Mix until everything is well incorporated.
  2. Place the chicken, making sure the marinade covers them.
  3. Cover with plastic wrap and refrigerate for 4 hours to up to 12 hours. 
  4. Preheat oven to 350 degrees. 
  5. Place chicken in a baking pan with the skin side down.
  6. Add the marinade and the orange wedges. 
  7. Bake for 30 minutes.
  8. Flip the thighs and spoon some of the marinade on top.
  9. Bake for 20 to 25 more minutes.
