The first step is to heat olive oil in a pot over medium heat. Saute the chorizo for 5 minutes. As the sausage cooks, it will release its fat and begin to brighten.
Next, add the onions and cook until translucent, around 5 minutes. Add the garlic clove and cumin and cook until fragrant.
Add the rice and saute for 1 minute, until slightly transparent.
Add the stock and bring to a simmer. Cook on low heat for 20 minutes or until the rice is almost done, but there is still stock in the pot.
Stir in the chickpeas and continue to cook until the rice has finished cooking.
