This is a thick and comforting soup with thin ribbons of egg mixed with a delicious and hearty stock. It's really good and honestly impossible to miss takeout when you have it.

When you are on a very low-carb keto diet, it doesn’t mean you need to keep down a lot of your favorite soup. This Keto Egg Drop Soup is such a healthy and hearty soup that suits most of the diets.

What is Keto Egg Drop Soup?

As the name implies, Egg Drop Soup is a kind of comforting soup with condiments, herbs, and spices like salt, pepper, scallions. Also with optional ingredients like garlic, onion, tofu, bean sprouts, ginger, corn, and more.

The egg is “dropped” before the end of cooking the soup. Not literally dropping the whole egg. The egg is whisked first then pour thinly into the soup while stirring slowly.

The ingredients and varieties of the soup depend on the country, regions, and the season it is prepared.

Keto Egg Drop Soup is basically an egg drop soup that has a very low carbohydrate content that can be consumed by keto and very low carb dieters.

Just any other Egg Drop Soup, it is so flavorful and filling. Although they can be served any time, they are great during the cold or rainy season.

One time, I had a few Chorizo and Egg muffins left. It’s low carb, too. I ate it with the soup. They are so good together.

A little bit about Keto Diet

For some who may not fully understand what Keto means, it is short for Ketogenic. This is a very low carb, moderate protein, and high-fat diet. The main source of energy for the body being used is ketones instead of glucose.

The ketogenic diet became popular in the 1920s for 2 decades as therapy for children with epilepsy. It slowly diminished because of the new drugs formulated for epilepsy.

Nowadays, for over 2 decades, the Keto diet became popular again not only for children with epilepsy but as a therapy for other health issues. Some doctors and health professionals have advised this diet to improve their metabolic syndromes

The aftereffect is these people lose weight fast. Hence this diet became more popular for this reason.

Different studies currently going on for this type of diet.

How to make the Keto Egg Drop Soup

Making this Keto Egg Drop Soup is simple and will only take a few minutes. This soup has simple ingredients but there are choices to make, too. The ingredients you need are:

Eggs – there are 4 types of eggs:

  • Conventional eggs -from caged chickens and fed with grains supplemented with vitamins and minerals
  • Organic eggs – from chicken that gets organic feed not treated with antibiotics or hormones
  • Pastured eggs – from chickens that roams freely and eats their natural foods
  • Omega-3 Enriched Eggs – almost the same as conventional but chicken feeds are enriched with Omega-3 sources like flax seeds

Chicken stocks – it’s available in groceries and it can be homemade. Chicken stock is made from simmering the bones for a long period. Sometimes up to 24 hours when done on stovetop or slow cooker. It is more flavorful and nutritious.

Coconut Flour – this serves as a thickener for the soup

Ginger – Fresh ginger tastes better. But make sure not to burn it as it will taste bitter. It also has a lot of health benefits including high in antioxidants, pain reliever, and improves digestion.

Garlic – fresh is good if you don’t have the powder form. A popular ingredient in cooking especially by sauteing for its strong flavor and aroma. It makes the dish more flavorful. If using fresh, crash and chop finely. Don’t burn it. Like ginger, it will have a bitter taste. It should have a golden brown in color.

Green Onions – it is the same as Scallions. I used the white part with this soup and I cook it like I saute an onion. It gives a really nice flavor to the soup. You can use the green part as garnish. Chopped finely.

Soy Sauce – it added depth color and saltiness to the soup.

Olive Oil – for sauteing. Don’t make it extremely hot to the point that it started to smoke. The smoke point is around 374 – 405°F according to some sources. This oil the healthiest with high antioxidant properties and rich in vitamins and minerals, too.

To make the Keto Egg Drop Soup

To start with, heat the olive oil in a small saucepan over medium heat.

Then add the green onions and sauté until transparent, around 4 minutes.

Add the ginger and garlic powder and cook until fragrant, around 30 seconds.

Add the coconut flour and mix until incorporated. 

Then slowly pour in the chicken stock and whisk until incorporated.

Add the soy sauce. Then reduce the heat to a very soft simmer. 

In a small bowl whisk the eggs until fully combined. Slowly pour in the beaten eggs while you slowly stir the soup. 

Turn off the heat and serve.

Ingredients

  • 3 Eggs
  • 4 cups chicken stock
  • 1/2 Tbsp coconut flour
  • 1/2 Tsp ginger powder
  • 1/2 Tsp garlic powder
  • 1 Tbsp soy sauce
  • 1/4 Cups green onions (just the white parts)
  • 2 Tbsp olive oil

Instructions

  1. Heat the olive oil in a small saucepan over medium heat.
  2. Add the green onions and sauté until transparent, around 4 minutes.
  3. Add the ginger and garlic powder and cook until fragrant, around 30 seconds.
  4. Add the coconut flour and mix until incorporated. 
  5. Slowly pour in the chicken stock and whisk until incorporated.
  6. Add the soy sauce. Reduce the heat to a very soft simmer. 
  7. In a small bowl whisk the eggs until fully combined. Slowly pour in the beaten eggs while you slowly stir the soup. 
  8. Turn off the heat and serve.

Notes

You may use fresh ginger and garlic if available

You may chop the extra greens from green onion and use them as garnish.
