Instant Pot stuffed peppers with orzo and Italian sausage are an easy way to bring a comforting, filling meal to the table without spending hours in the kitchen. Using the Instant Pot helps the peppers cook evenly while keeping the filling tender and flavorful. This recipe is a great option for busy weeknights, family dinners, or anytime you want a hearty meal that feels familiar but still a little different.
Ingredients
- 4 large bell peppers, any color
- 1 ½ cups prepared orzo pasta
- 1 pound hot Italian sausage
- 1 small onion chopped
- 5 ounce can diced tomatoes
- 1 ½ cups shredded mozzarella cheese
- 2 cups of water
Instructions
- Turn the Instant Pot on to sauté mode and brown the Italian sausage with the chopped onion. Break the sausage up as it cooks so it browns evenly. Once the sausage is fully cooked and the onion is softened, turn off sauté and carefully remove the mixture from the pot.
- In a large bowl, mix the cooked sausage and onion with the prepared orzo pasta, diced tomatoes, and mozzarella cheese until everything is evenly combined.
- Cut the tops off the bell peppers and remove the seeds and membranes. Stuff each pepper with the orzo and sausage filling, pressing it in gently so the peppers are nicely filled.
- Pour the water into the inner pot of the Instant Pot. Place the trivet inside. Set a heat-safe casserole dish on top of the trivet (it needs to fit inside the Instant Pot), then stand the stuffed peppers upright in the dish.
- Close the lid and set the valve to sealing. Select manual or pressure cook on high pressure and set the cook time to 10 minutes.
- When the cooking time ends, let the Instant Pot do a natural release for 4 minutes (don’t touch the valve during this time). After 4 minutes, carefully switch the valve to venting to release the remaining pressure with a quick release.
- Once the pin drops and the lid unlocks, open the lid carefully. Lift out the casserole dish and remove the stuffed peppers. Let them cool for a minute or two before serving because the filling will be very hot.
Notes
- Choose bell peppers that are similar in size so they cook evenly and sit upright in the casserole dish. If a pepper wobbles, trim a very thin slice from the bottom to help it stand without cutting through the pepper.
- Let the Instant Pot fully heat before adding the Italian sausage when using sauté mode. This helps the sausage brown instead of steam and adds more flavor to the filling.
- Make sure the orzo pasta is already cooked before mixing it with the sausage. This recipe uses prepared orzo, and adding dry orzo will change the texture and cooking time.
- When stuffing the bell peppers, press the filling in gently. Packing it too tightly can cause the filling to push out while cooking under pressure.
- Use a heat-safe casserole dish that fits comfortably inside the Instant Pot and sits securely on the trivet. The dish should not touch the sides of the pot so steam can circulate properly.
- Allow the stuffed peppers to rest for a minute or two after cooking so the filling can set. They will be very hot right out of the Instant Pot.
- Once cooled, store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently until warmed through.
- Freezing is not recommended, as the peppers can become too soft and the orzo may lose its texture.
