How to make refrito

The first step is to saute the onion in olive oil over medium heat until translucent.
Add the garlic and cook for an additional minute, stirring constantly to avoid burning the garlic.
Add the chopped tomatoes and cook until the tomatoes become darker, around 5 minutes. This will concentrate the flavor.
Add the seasonings and stir well. Continue simmering for an additional 5 minutes.
