How to make Bolitas de Platano

Ingredients

  • 1 Plantain, ripe and diced
  • 1/3 cup of queso fresco
  • 3 Tbsp of masa harina or harina pan
  • Salt and pepper to taste
  • Oil for frying

Instructions

Heat water in a small pot over medium heat. Once it's boiling. add the plantain and cook for 10 minutes. It should be soft. Drain and discard the water and transfer the plantain to a bowl.

With the help of a fork mash it. Add the queso fresco, salt and pepper, and masa harina.

With your hands knead until you have a soft dough. If it's too sticky add 1 tbsp more masa harina.

Heat the oil in a pot over medium heat. Shape small balls and transfer to the hot oil.

Fry for around 4 to 5 minutes or until deep golden and done.
