  • 1 tsp vanilla extract
  • 1¼ cup all-purpose flour

  • ¼ cup pistachio cream OR ¼ cup of pistachio butter plus 2 tbsp of sugar.

How to Make Pistachio Thumbprint Cookies

Step 1: Preheat the oven to 350°F. Line a baking tray with parchment paper and set aside.

Step 2: Using a handheld or stand mixer, beat butter and sugar together until light and fluffy. Add the egg yolk and vanilla extract, and mix until combined.

Step 3: In a separate bowl, whisk together flour, cocoa powder, and salt. Fold the dry mixture into the butter mixture until a dough forms.

Step 4: Using a 1″ cookie scoop, portion dough into 1″ balls and place on the prepared tray about 1″ apart.
