Instant Pot Puerto Rican Potato Salad

Step 1 – Place your potatoes, and eggs into the bottom of your Instant Pot. Make sure the eggs are above the potatoes.

Step 2 – Add the water

Step 3 – Close the lid and set the IP to Manual high pressure for 4 minutes.

Step 4 – Quick release

Step 5 – Drain the water. You can place the eggs in ice water bath if you want. I didn’t do this.

Step 6 – Sliced the eggs and chop the apples.

Step 7 – Add potatoes and all the ingredients into a bowl.

Step 8 – Mix them together.

Step 9 – Refrigerate or serve room temperature.
