What are the ingredients to make Chicken Dip using Rotisserie Chicken?

To make this no cheese rotisserie chicken dip, you are going to need the following ingredients:

  • Rotisserie chicken – You can leave the skin on or remove it depending on your preference
  • Mayo – We prefer to use light mayo, but you can use full-fat
  • Fresh green peppers – You will need two small peppers or one large pepper
  • One onion – We prefer to use a white or yellow onion
  • Cumin – This is what gives the chicken dip its flavor, so don't skip it
  • Salt and pepper – To taste

Chicken Dip with Leftover Rotisserie Chicken

Now that you have all of your ingredients, make this chicken dip. Follow the step below.

Shred the rotisserie chicken and place it in a bowl. Leave the skin on for flavor, but you can remove it if you want.

Add the diced green peppers and onion to a food processor.

You may add more green peppers, red peppers even carrots if you want. My kids prevented me from adding more “veggies” pfft!

After dicing the onion and peppers add the chicken into the food processor.

Add the cumin and slice/dice/chop whatever your food processor button calls it because mine has all three names in the button.

Please note that we made tons of this dressing since we were having people over. You might want to make sure you taste your dip and flavor it to your liking.

Add salt and pepper and you are done!

Ingredients

  • 1 lb. or 2 cups of rotisserie chicken (leave the skin)
  • 1 med green pepper
  • 1 med onion
  • 1/2 teaspoon cumin
  • 1 1/2 cup of mayonnaise
  • Salt & pepper to taste

Instructions

  1. Add green peppers and onions to the food processor and chop.
  2. Add chicken and chop.
  3. Add cumin.
  4. Add Salt & Pepper
  5. Chop until your desired consistency.
  6. Server with favorite cracker or tostada.

Notes

To give it more flavor you can add red peppers to the mix too.
